(1) 15 ounce raisins
2 1/2 cups hot water
combine and let sit for about 5 minutes
1/2 cup sugar
3/4 cup molasses
1/4 margarine
2 eggs
2 tsp.vanilla
5 cups flour
1 tsp baking soda
1 tsp salt
Cream margarine,sugar and molasses till light,add eggs one at a time, add vanilla. Mix together flour,salt and soda. Add alternately with raisins and water ,mix .Grease or spray 4 cans( about the size of spaghetti cans) and then fill about 2/3 full of batter. Bake 350* for 1 hour. Leave in cans for about 5 min on their sides and then remove to wire rack and cool completely. May be frozen. Wrap in aluminum foil and then plastic wrap.

Soft Sugar Cookies (fantastic!)
6 cups of sifted flour
1 tsp.soda
1 tsp.salt
1 cup butter, softened
2 cups sugar
2 eggs
2 tsp. vanilla or almond
1 cup sour cream
Frosting
1 stick of butter,1 tsp almond or vanilla flavoring,some cream,add slowly so it doesn't get too runny,and about 3/4 bag or so of powered sugar.
Cream butter and sugar; add eggs,vanilla,and sour cream: blend well. Add dry ingredients and beat well. Refrigerate for about an hour and then roll out 1/4 inch thick on floured board. (its important to make it that thick) cut out shapes and bake at 350* for 10-12 minutes. When cookies are cooled, ice and decorate as you wish. Makes 4-5 dozen.
Frosting:
mix cream,powdered sugar,almond flavoring and butter to a nice smooth consistancy.

Another yummy bananna bread
1/4 cup shortening or margerine, I used it at room temp.
1 cup sugar or a little less.
4-5 banannas mashed
1 egg
2 cups flour
1 tsp. baking soda
pinch salt
Combine ingredients,it will be a little lumpy.Cook at 350* in a greased bread pan for 55-60 min.
It made a little more than a bread pan, so I made the little muffins with the leftover.

Frog Eye Salad
1 cup sugar
2 T flour
2 1/2 tsp salt
1 3/4 c pineapple juice
2 eggs beaten
1 T. lemon juice
3 quarts water
1 T. cooking oil
1 pkg (16oz) acini de pepe pasta
3 cans (11 oz) each mandarin oranges drained
2 cans (20 oz) pineapple chunks drained.
1 can (20 oz) pineapple crushed drained.
1 carton non dairy whipped topping, (16 oz)
2 cups miniature marshmallows
2 cups coconut (optional)
Combine sugar,flour and one-half tsp of the salt. Gradually stir in pineapple juice and eggs. Cook over moderate heat, stirring until thickened. Add lemon juice,cool mixture to room temp.
Bring water,remaining two teaspoons salt and oil to boil. Add acini de pepe. Cook at rolling boil until pasta is done. Drain. Rinse with water,drain again and cool to room temp. Combine egg mixture and pasta. Mix lightly but thoroughly. Refrigerate overnight in airtight container. Add remaining ingredients. Mix lightly but thoroughly. Refrigerate until well chilled.

Cabbage and Noodle Salad
Salad:
3 oz. pkg. dried chicken flavor oriental noodle soup
6 c. green cabbage shredded
4 scallions chopped
1/2 c toasted sunflower seeds
1/2 c. sliced toasted almonds
Dressing:
seasoning packet from soup
1/2 cup canola oil
3 T. vinegar
2 T. sugar
Black pepper to taste
Crush noodles, combine with salad ingredients in large bowl.
Mix dressing ingredients together, pour over salad, cover and fridge several hours or overnight.
Toast seeds in 350 oven for 3 minutes if you want.

Seths NEW favorite sandwich
We went out to eat last week at a friends new restaurant in Laconia and we had a version of this sandwich. We loved it there, but we LOVE ours more!
1 pound of black pastrami
dark pumpernickel bread
blue cheese.
This will make about 6 sandwiches.
Toast the bread ,pile on the pastrami and top with blue cheese. Put in microwave ,30 seconds,until cheese is melted and serve! Yummy with no ADDED fat.

Joys Pizza Dough
2 tablespoons yeast
1 1/4 cup warm water
1/4 cup olive oil
1 teaspoon salt
3 cups flour
optional italian seasonings, or garlic powder
This makes 2 pizza doughs
You can freeze before they rise. Then take them out early on the day you want to use them.

Tortilla Soup
This is so good.
1 can of diced tomatoes, you can use whole,just chop them up some.
1 can corn,drained and rinsed
1 can beans,(not pork and beans) I use pinto or black.Drained and rinsed.
about 3 cups of chicken broth
1 onion chopped
1 pound of hamburg or chicken
l green or red pepper chopped
1 pkg of taco seasoning.
I use black pepper,salt,garlic powder,cumin,cilintro,some chili powder.
1 or 2 pkg of picante powder.
Mix all together and simmer for a while.
Serve with grated cheese. Pepperjack is good
Have some tortilla chips handy
